This ratio is simple: 3:1! E.g. 6oz of popcorn you would use 2oz of oil. This works for canola or coconut.

Nak-Paks / Combo Packs are pre-measured for your kettle with the correct amount of corn, coconut oil and Flavacol to allow for a perfectly consistent pop – every time! These come in 4, 6, 8,12 or 16oz and are usually recommended for easy training / consistency of product. Depending on your situation and volumes, there may be a conversation for bulk!

This right here is your money maker, the smell of Flavacol is what brings all the customers to the yard! While there is a recommended amount on the side of each carton / bucket, I would highly recommend playing around a little with that number to ensure you’ve got the flavor you’re looking for!

Mushroom popcorn (Huskier corn) – Round shaped with a rough surface. This corn is often used for gourmet flavors and coatings like caramel or cheese. It’s much stronger than butterfly popcorn and can withstand agitation in a cooker-mixer or tumbler

Butterfly popcorn (More Tender) – Inconsistent in shape, it has wings that stick in different directions. Butterfly popcorn is often used for classic popcorn flavors like butter and salt, and other powder-based seasonings. (Most often referred to as Movie-Style corn!)

This can vary quite drastically. The cartons can usually generate between 30-50 cones, but with skill and the right humidity this number can change based on the fluffiness and size you choose! So, each box of 6 cartons can generate between 180-300 servings

Ensure your machine is kept in a cool, dry place – avoiding as much humidity as possible.

Shut down procedure:
1) Turn heat control to maximum position, allow the machine to run for 3-4 minutes. This burns out any excess sugar.
2) Turn the heat switch off, allow the motor to run for 1-2 minutes to “cool down”
3) Turn the motor and master switch OFF and allow the motor to come to a COMPLETE stop.

While Gold Medal has a large selection of pre-mixed sugars, you could also heavily save by mixing your own! Using a fine sugar for most machines, mixed with a couple scoops of your preferred flavor of Flossine will allow you to make multiple flavors with ease!

This can be looked at from a few directions: space, margin, people and volume. Bulk tends to take up a little less space in the storage area, and keeps your product costs lower. If you have a large turnover in staff or are working with a smaller team, there is a benefit to the grab-and-go nature of the portion. The last thought is the140oz bag/106oz cheese need to be used rather quickly, and if you’re doing a smaller volume on specific days this may challenge you with spoilage.

The portion cheese has a far longer date on them, however once a can / bag is opened they recommend using inside 5-7 days.

Most humidified warmers can get these thawed pretzels at serving temperature in just about half an hour!

Dipping sauces are always the go-to! We recommend our Jalapeno Portion Cups as a great add-on! If you have the space, we could always suggest topping with a little butter and one of our Gold Medal savories – Garlic Parm, Cheddar Cheese and more!

Waffle cones (small / medium), Torpedo / Flat bottom cake cones and Sugar cones!

It is quite as the name sounds, a round chip similar in size to round nachos – but made from waffle cone! These sweet treats make for a plethora of options to get the ice cream / sweet nacho game going!

This does change based on your thickness! Each box has six 5lb bags, mixed they can make between twenty to thirty 8-inch cakes.

With a bit of skill, anything is possible. We highly recommend a shallow fryer for the best, most consistent results! The EQ8050D is the best in the business, allowing you to cook up to three 8-inch cakes at once! For the high-volume output, there may be some other options depending on your venue.

Just add water! For each 5lb bag you will need 8 cups + 2oz (66oz). For some added fun, there is a Red Velvet additive available!

While most places offer their Funnel Cakes at 8 inches, don’t be afraid to try something new! We also carry 6inch and triple 4inch rings!

While this dessert is among the biggest / most profitable items you can find at a fair, they don’t require much to make! Aside from your EQ8050D fryer, you would only require a vessel large enough to mix in, a PT5112 funnel pitcher and your preferred Ring/Plate combo!

No, each of these machines are calibrated for the separate temperatures required for either type of apple.

A successful candy apple comes down to two things: temperature and cleanliness. It is important to make sure your apple is clean, dry, and free from any wax to ensure successful adhesion. Make sure your apple is room temperature and you’re following the instructions for your caramel / candy before dipping!

This will mostly come down to the size, but it is generally between 70-100 apples

Caramel apples generally do much better in a plastic clam-shell, whereas a candy apple does well with a cellophane wrap.

Yes! Shave ice has a more snow-like texture and is softer than a Sno-Kone which is made from crushed ice.

While this does vary by machine, most of our machines use regular cubed/chunks of ice. Nothing larger than 2 inches would be best.

We would recommend one of the smaller machines, generally the Sno-King is best suited as it is lightweight and uses a standard 15a plug

That sweet middle spot would be best suited for the Sno-Konnette. This machine can shave up to 500lbs / hour!
